I have done a lot of different stuffed mushrooms on this humble blog, but none more different than this. This one has a Latin feel with chorizo and plantains with a little melty queso cheese. All topped with salty parmesan cheese. I hope you like it.
12 large baby Bella mushrooms
1/2 cup chorizo sausage
1/2 pound plantation pieces (store bought)
1 teaspoon chili powder
1 tablespoon chives
1/2 cup queso blanco
1 teaspoon cilantro
1/2 cup parmesan cheese
Preheat oven to 350.
Place a rack on a sheet pan, add mushrooms, and bake for 15 minutes.
With a paper towel remove liquid from inside of mushrooms.
Add chorizo to a skillet on medium heat and brown.
Dice cooked plantains and add to pan.
Add chili powder, chives, and cilantro. Stir.
Add queso blanco.
Add to cooked mushrooms on a parchment-lined baking sheet.
Bake for 12 minutes.
Serve.
I never would have thought to add plantains!
