Spring in a cookie. I won’t belabor the point. Ok , I’ll say more: strawberry, lemon, and elderflower in one cookie.

2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 large egg
1 cup sugar
1 teaspoon strawberry extract
1 teaspoon lemon extract
1 teaspoon elderflower (Erin’s Elderberries) syrup, divided
1/2 teaspoon lemon zest
5 drops red food coloring
5 drops yellow food coloring

In bowl 1 mix salt, baking powder and salt.

In bowl 2 cream sugar and butter.

Add egg and beat.

Add bowl one to bowl two in three parts.

Divide dough in 2 parts; to one half, add lemon extract and lemon zest and 1/2 teaspoon elderflower. Add yellow food color and mix.

To the other half, add strawberry extract and 1/2 teaspoon of elderflower syrup. Add red food color and mix.

Wrap two balls and refrigerate for 1 hour.

Roll out lemon dough on parchment in rectangular shape.

Roll out strawberry dough on parchment in rectangular shape.

Place lemon dough on top of strawberry dough and using parchment roll tight.

Refrigerate for 30 minutes.

Cut cookie roll in 3/8 inch slices and place on parchment-lined baking sheet.

Heat oven to 375.

Bake cookies for 8-10 minutes.

Let cool and serve.
