This is a Deep South dish that is comforting and filling. It starts with a biscuit that brings home the sweet potato flavor. The biscuit is also light and airy, which you wouldn’t expect with the addition of the sweet potato. Then the red eye sausage gravy takes it to an absurd level of flavor. I hope you like it.
1 cup mashed sweet potatoes
2 cups flour
2 tablespoon baking powder
1 teaspoon baking soda
1 tablespoon sugar
1 cup milk
1 stick butter cold and cubed
1 tablespoon sugar
2 cup’s sausage gravy(recipe on the blog)
In a bowl add flour, baking powder, baking soda, salt, and sugar and mix.
Cut in butter cubes and make into a sand like consistency.
Add mashed sweet potatoes.
Add milk and mix until combined.
Place dough on a floured surface.
Flatten dough to 3/4 inch.
Cut biscuits and place on a parchment lined baking sheet.
Heat over to 425.
Bake biscuits for 14-18 minutes.
Remove biscuits and top with sausage gravy.
Serve.
