Coney Omelette

I promise this will be the last coney recipe because I’m out of Detroit chili. My thought process was that eggs are a blank canvas, and whatever you add to them will be the flavor of the dish. I decided to add the chili, the hotdog with cheese and post importantly, the onions all inside of an omelette. The key is to make sure the omelette is sturdy enough to hold all the goodness. I hope you like it.

3 large eggs
1 tablespoon milk
Salt and pepper
1 hotdog sliced in thin pieces
1 hotdog sliced in 1/4” pieces
2 tablespoons cheddar cheese
2 tablespoons sweet onion diced
1/2 cup Detroit coney chili

In a bowl mix eggs and milk, whip with a fork for 3 minutes.

In a nonstick pan on medium heat add hotdog slices.cook until browned.

Heat chili in the microwave for 30 second bursts.

Spray pan with cooking spray.

Heat to medium and add hotdog pieces and brown. Remove 1/2 of hotdogs.

Add egg mixture to pan on medium heat. Stir eggs with spatula. Let set and cook 75% cooked.

Add 1/2 of chili and 3/4 of the cheese to left side of the omelette.(It’s the more flavorful side) Add remaining hotdogs.

Flip right side over to form an omelette.

Top the omelette with remaining chili and cheese.

Top with onions.

Serve.
