I haven’t done any “Hidden Gems” in a while, mostly because I haven’t been getting out much lately. That said, I found one at the Long Family Farmers Market in Stafford, Virginia. When I was at the market after wandering around and getting some produce, I saw a food truck. It was called Catfish on Wheels. When I looked at the menu, I saw a number of items that looked delicious. The most interesting to me was brisket; when you advertised Catfish on Wheels, you don’t expect to see brisket.

Since the Big Bad W barbecue left Stafford a couple of years ago, there have not been any good barbecue places around. So I decided to give the brisket a go and found it is absolutely delicious. A great bark, tender pull apart, everything you would hope for a competition brisket. I would rate the brisket in the top 10 that I’ve had, and that includes the ones I’ve had in Texas.

I’ve eaten at this food truck twice, and the brisket has been stellar every time. That’s why I decided to write about it. The other thing that we tried from the food truck was the hush puppies and again consistency is everything; they were good both times, so if you’re ever at the Sunday market in Stafford, I highly recommend that you try Catfish on wheels.
