I did something like this a few years ago, but I have a new one with and impoved formula on the cookie and decided to alter my toppings. I added egg to the batter and changed some of the ratios. The results got raves from the taste tester ie the crash test dummies. I hope you like it.
Dry ingredients
1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
Wet ingredients
1 stick butter at room temperature
8 ounces cookie butter
1/2 cup sugar
1/2 cup brown sugar
1 egg beaten
1 teaspoon vanilla
Add ons
18 Hershey kisses
1/2 cup apricot jelly
In bowl 1 add flour, baking soda, and salt.
In bowl 2 combine cookie butter and butter.
Add sugar and brown sugar and cream.
Add beaten egg and vanilla and mix.
Add bowl 1 into bowl 2 in three installments.
Refrigerate dough for 30 minutes.
Heat oven to 350.
Scoop 1β balls on a parchment lined baking sheet.
Bake for 9-11 minutes at 350.
Remove from oven and place chocolate kiss in center.
For the apricot cookies make an indentation in center and fill with apricot jelly.
Let cool.
Serve.

This looks very interesting I want to try to make it at home now. Good job π
