Cauliflower Fried Rice

1 chicken boneless beast or 2 cut into cubes chicken thighs boned
12 oz cauliflower rice
6 oz frozen mixed vegetables thawed
1/2 onion chopped
2 cloves garlic
3 tablespoon low sodium teriyaki sauce it has 60% less sodium than soy sauce (I take bp meds)
1 egg
4 pats butter
1/2 white Wine for marinating the chicken
Oil for cooking

I use a pancake griddle set at 350
You can use a wok or a pan on medium high

Oil pan
Place chicken and brown cook until almost done. Remove
Add more oil
Add onions and garlic to soften
Place cauliflower rice on heat
Add two tablespoons water
Let cook for 8 minutes until tender
Tossing every few minutes
Add butter toss
Add mixed veggies stir
Add chicken stir
Add teriyaki stir
I like to cook until there are brown bits

Scramble egg and mix with ingredient

Serve with favorite sauce

This works with rice also but the rice should be pre-cooked
I like to put my rice in the refrigerator on a sheet tray for 15 minute to stop cooking and make for firmer rice
