These are not traditional Maryland crab cakes they are a Midwest version
1 16 oz can lump crabmeat (jumbo lump is better but it’s hard to find)
1 small red onion chopped fine
2 celery stalks finely chopped
10 crushed ritz crackers
2 tablespoons Mayo
1 Teaspoon dry mustard
1 egg
1 1/2 tablespoon old bay seasoning
1 tablespoon dried parsley
Oil and butter to fry
Mix crab, onion, celery, parsley, Mayo
Lightly stir add Mayo and egg
Add crackers and old bay stirring lightly until all ingredients are mixe
Form patties will make 4 to 5 patties or 12 – 14 balls.
let sit for 1-2 hours to firm up
Heat skillet to medium add oil and butter
Lightly brown both sides serve
