I fully admit to stealing the base idea from Tyler Florence but I used flavors I like better. This has been at out house for many years at Thanksgiving. We have even tried to put marshmallows on it.
5 large sweet potatoes
1/3 cup maple syrup
1/2 teaspoon kosher salt
1 oz bourbon (for the dish not the cook)
2 sticks unsalted butter
3/4 cup packed brown sugar
1/2 cup flour
1 1/2 cup chopped pecans
Heat oven to 400
Prick sweet potatoes with fork
Bake for 45 minutes
Add bananas to the oven
Bake for 15 additional minutes
Let potatoes cool until you can handle safely
Remove potato flesh
Add peeled bananas
Add maple syrup, salt and pepper and bourbon.
Mash until mostly smooth (you want it a little chucky)
Place in a casserole dish
In a separate bowl add cubed cold butter brown sugar flour making a crumble add chopped pecans.
If you want a kick add some 1/2 teaspoon chili powder
Cinnamon is always yummy.
Top casserole bake for 20 minutes at 350
