Holiday Brittle (ok, pecan bourbon brittle but holiday sounds so much better)

This is is something new for me; I have never made a brittle before.  Of course, I added some things to put it over the top: bourbon, a little salt and the warmth of some cinnamon and cardamom. See, that’s how I call it Holiday brittle.  I will tell you that a wooden spoon and a candy thermometer are important. Many years ago I was making fudge, and the plastic spoon melted.  Hope you enjoy it.
 1 cup light corn syrup
2 1/3 cups sugar
3 tablespoons butter
1/2 cup water
1 tablespoon baking soda
8 oz whole pecan halves
8 oz  pecan pieces
1/2 teaspoon salt
1 teaspoon  bourbon
1 teaspoon vanilla
8 oz melted semi sweet chocolate
1/4 teaspoon cardamom
1/4 teaspoon cinnamon
Buttered sheet pan
In a large pan heat sugar, corn syrup, water, and butter until boiling
Boil until 250 on a candy thermometer
Add pecans, salt, and baking soda
Cook until the candy thermometer reaches 290
Pour onto baking sheet
Cool
Melt chocolate in 20 second bursts in the microwave; stir until smooth
Mix in the cardamom
Pour on chocolate over brittle
Let cool
Break into pieces
