Hush Puppies (gluten-free)

You may or may not have seen all my fried seafood recipes on my blog (the story of a fryer and the boy who loved it), but what would you serve fried seafood with?  Hush puppies!  These are a great addition to seafood or fried chicken.  If you want them lighter, leave out the cheese.  I added a little cayenne to break up heaviness of the fried, and use fresh chives if you can.  I know I buried the lead: these are gluten free for those of you who are living that life.  I won’t judge.
1 cup corn meal (gluten free)
3/4 cup rice flour
2 tablespoons sugar
1/2 teaspoon chive
1/2 teaspoon chili powder
1/4 teaspoon black pepper
1/4 cup grated cheddar cheese
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon season salt
3/4 cup buttermilk
1 teaspoon hot sauce (a little more kick — it’s optional)
1 large egg
2 quarts of oil
Heat oil to 350 in a deep fryer, wok, or electric skillet
Mix corn meal, rice flour, sugar, baking soda, baking powder, salt and spices
Add milk and egg, hot sauce and mix until dough comes together, don’t over mix
Let rest for 10 minutes
Add cheese and chives
Using spoons, form them into balls
Drop in hot oil and cook, turning occasionally until golden brown, about 6 minutes; turn once.
Drain on a sheet pan lined with paper towel and sprinkle with salt.
If making a lot and want to keep them hot, place cooked hush puppies in a 190 degree oven on a sheet pan
Serve hot with Remoulade sauce,
