Slow Cooker Lamb Shanks

Some of you know my aunt and uncle owned a restaurant in Greektown.   When I used to go down to Greektown in Detroit, I would always order a gyro.  Then I discovered a lamb shank.  There is a restaurant in Manassas that makes a great one – Katerina’s .  So I decided to do a lamb shank or better yet, have my daughter Mary and son-in-law Jack do my recipe.  So Mary and Jack  gave me the thumbs up.  Hope you like it too.
2 pounds lamb shanks
1 15 oz can tomatoes
16 oz red wine
Salt & Pepper
1 sprig thyme
1 sprig rosemary
1/2 teaspoon oregano
16 oz baby potatoes
3 cloves garlic, chopped
1 onion, diced
2 tablespoons olive oil
Sauté onions and garlic in olive oil until soft
Salt and pepper lamb shanks and place in a different skillet; brown on medium heat on all sides
Place in slow cooker at 275
Add tomatoes, rosemary, wine, thyme and oregano
After 3 hours add potatoes
Cook for 4 total hours at slow cook setting
Oven method:
Follow all steps and then place in an oven safe dish and cook for 4 hours at 300 degrees
