Country ham with red eye gravy

This is a southern breakfast staple.  One, it’s simple, salty ham with a strong coffee and that sweet honey note.  It’s your morning wake up call on a plate.  Hope you like it.
1 12 oz slice country ham (they are salty -watch your blood pressure)
5 oz black coffee
1 teaspoon hot sauce
4 to 5 grinds of  freshly cracked black pepper
1 teaspoon honey
2 teaspoons butter, unsalted
Heat an un-greased skillet to medium heat
Add ham
Cook for 2 minutes on each side
Add butter to pan
Add coffee
Let coffee reduce for 4 minutes
Add honey
Add pepper
Serve with biscuit or grits, but you will never get grits at my house – that’s  all you need to know.  Just let it go.  I’m not getting into it.
