Since I was introduced to cookie butter, I have been obsessed with the product in a non-stalker, healthy way. Since I had not done waffles in a while, I thought, “Hey, what about cookie butter?” Then I thought about some bananas to round it out. Sure, I could have used some rum, but I hope you like it anyway.
2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 cups buttermilk
1 egg
3/4 cup cookie butter
1 banana, mashed
1 teaspoon vanilla
1/4 cup melted butter
Topping:
2 bananas, sliced
1/4 cup brown sugar
1/2 cup cream
1/2 cup chopped walnuts
2 tablespoons butter
1/2 teaspoon vanilla
1/4 teaspoon salt
Mix flour, baking powder, and salt.
Mix mix egg, buttermilk, and cookie butter.
Add mashed banana to the wet ingredients
Stir in butter and vanilla.
Add dry goods into wet and mix until everything comes together.
Let rest for 20 minutes.
Heat waffle iron.
Make caramel sauce:
In a skillet, heat butter and brown sugar until bubbling, then add cream.
Add salt and vanilla and boil for 5 minutes.
Spray or grease waffle iron.
Add batter; cook per waffle iron directions.
Remove waffle and add to plate.

Caramel sauce
