Spring is the perfect time for key limes. How about a tart and tasty cupcake? Cream cheese frosting is always a good addition to any cupcake. I hope you like it.
2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
8 ounces butter, softened
2 tablespoons key lime juice
1 1/4 cup milk
3/4 cups sugar
2 tablespoons lime zest
2 eggs beaten
1 cup white chocolate
Frosting:
4 ounces cream cheese, softened
4 ounces butter, softened
1 teaspoon lime extract
1 teaspoon lime juice
2 cups powdered sugar
Preheat oven to 350.
In bowl 1, add flour, baking powder, and salt.
In bowl 2, cream sugar and butter until smooth.
Add milk and eggs and mix.
Add lime juice and like zest.
Add white chocolate cups and mix.
Add bowl one into bowl two in three parts.
Place in cupcake pans, 2/3 full.
Bake for 21-25 minutes.
Remove and cool on a wire rack.
Frosting:
Mix cream cheese and butter until incorporated.
Add the lime juice and zest and mix.
Mix the powdered sugar one cup at a time until smooth.
Frost cupcakes.
