This is how we don’t roll. Since I was a kid, my family has made salami rollups on most holidays because they were easy and tasty. They consist of salami, cream cheese, and Worcestershire sauce, maybe chives. A lot of fat and salt – not much redeeming value in that. I’ve done an update adding a cucumber base, integrating the salami in the cream cheese, adding some everything Italian seasoning on top (which has thyme, red pepper, basil, oregano, and some other items). A little healthier, more flavor notes, and a new holiday addition. I hope you like it.
1 cucumber sliced in 1/8 inch slices
1 16-ounce pack of cream cheese at room temperature
2 tablespoons of chives, diced fine
2 tablespoons of Worcestershire sauce
2 teaspoons of everything Italian spice mix
4 ounces white wine salami, diced fine
Mix cream cheese, chives and salami.
Add Worcestershirej in and Italian spice and mix.
Top cucumber slices with cream cheese mix.
